MY JOURNEY

I AM ONE OF THOSE HUMANS WHO HAS LIVED A VERY UNCONVENTIONAL LIFE, A TYPICAL CREATIVES PATH. I WAS BORN IN NORTHAMPTONSHIRE AND  TRAVELLED THE WORLD SOLO ON A MISSION TO FIND INTERESTING AND BOLD FELLOW HOMO-SAPIENS!

I FOUND THEM IN AUSTRALIA, WHERE I LIVED FOR 15 YEARS.  WHEN I ARRIVED I COULD BARELY COOK A ROAST DINNER AT 23 YEAR OLD. IN AUSTRALIA IF YOU CAN`T COOK AND HAVE ZERO SENSE OF HUMOUR YOU WON`T GET A DINNER INVITE. 

THANKFULLY I WAS LUCKY ENOUGH TO MEET SOME AMAZING CHEFS AND COOKS WHO SHOWED ME THE ROPES! THE CULTURE IN AUSTRALIA IS ABOUT BEING IN THE OUTDOORS, COOKING GREAT FOOD, HAVING GREAT TUNES AND WHO HAS THE BEST JOKES!

 

I STARTED THE BRAND BY TESTING DIFFERENT SPICE BLENDS IN MY GARAGE AND GOING TO LOCAL MARKETS COOKING JAMAICAN FOOD. I MISSED MY FAMILY IN THE UK AND WANTED TO RECONNECT TO MY JAMAICAN ROOTS. 

COMMUNITY IS A BIG THING IN AUSTRALIA, PEOPLE SHARE WITH OTHERS AND BBQ`S ARE AS COMMON AS THEY ENGLISH CUP OF TEA! I WAS NEVER CLASSICALLY TRAINED AS A CHEF, I USED MY INTUITION WITH COOKING AND GOT SHOWN BY GREAT HUMANS THAT CREATING AWESOME FOOD IS NEITHER EXPENSIVE OR DIFFICULT. 

MAIN STREAM CONSCIOUSNESS ENCOURAGES US TO BE LAZY AND STUPID. WE ARE TOLD THAT EATING HEALTHY IS REALLY EXPENSIVE AND SUPER HARD, I CALL BULLSHIT ON THAT! 

ONE OF THE FIRST BIG CATERING EVENTS WE DID IN AUSTRALIA AT HIGH SERVICE TIMES WAS SERVING 600 PEOPLE A DAY, I REMEMBER  A MARKET STALL HOLDER SAYING TO ME `YOU MUST BE CRAZY, DO TO THIS AS YOUR FIRST GIG` I SAID NO `I JUST LIKE LIVING LIFE`

THE BRAND DEVELOPED INTO GETTING CERTIFICATION FROM THE JAMAICAN CONSULATE OF AUSTRALASIA AS BEING AN AWESOME REPRESENTATION OF JAMAICAN FOOD, I SOLD THE KITS ALL OVER AUSTRALIA AND PRODUCED EVENTS FOR THOUSANDS OF PEOPLE. 

I NEVER WENT TO UNI, I DON`T TOLERATE DISINGENUOUS PEOPLE...YOU COULD SAY I AM LIKE MARMITE. I VALUE POSITIVE EXPERIENCES OVER MATERIALISTIC OBJECTS AND FREEDOM OF EXPRESSION OVER PLAYING THE GAME...AS I SAID BEFORE I HAVE HAD AN UNCONVENTIONAL LIFE. 

MY WORK IN AUSTRALIA WAS ALWAYS ABOUT COMMUNITY FROM EITHER AN EMPLOYMENT OR ENTERTAINMENT PERSPECTIVE. I WORKED WITH MARGINALISED REFUGEES AND WENT ON TO BECOME A CHEF AMBASSADOR FOR COMMUNITY BASED ORGANISATIONS. 

THROUGHOUT THIS JOURNEY I HAVE EXPERIENCED SECONDARY HOMELESSNESS, DOMESTIC VIOLENCE, AND PROBABLY HAVE CAME ACROSS MORE WEIRDOS THAT IS HUMANLY POSSIBLE AT 36. 

THESE EXPERIENCES HAVE TAUGHT ME TO NOT ONLY COOK GREAT FREEKING FOOD BUT HOW TO SURVIVE IN ANY CIRCUMSTANCE, A SKILL WHICH WE ALL SHOULD BE TAUGHT IN SCHOOL..BUT HEY IF THEY DID THAT THERE WOULD BE WAYYYY TO MANY TROUBLE MAKERS!
